RECIPE: Double Chocolate Walnut Brownies

by Charlene Taubert

Three ways to be my friend: 1. Bake me Brownies. 2. Bring me Brownies. 3. Be brownies!” – Author unknown

When it comes to decadent treats, is there anything more deliciously satisfying than a chocolate brownie?

For this recipe we doubled down on the chocolate quotient with a molten chocolate brownie base PLUS extra chocolate chips. The walnuts offer an earthy textural counterbalance to each enticing bite! These are truly the stuff cocoa flavored dreams are made of!

Innkeeper’s Tip: Use a double boiler. If you don’t have one, think about adding this to your “must haves” for baking. A double boiler provides gentle, indirect heat to whatever you’re cooking, especially chocolate – it melts it beautifully!

Ingredients

2 cups (12oz Package) of Nestle® Toll House® Semi-Sweet Chocolate Chips
1 stick of butter
3 eggs
1-1/4 cup flour
1 cup sugar
1 tsp vanilla extract
1/4 tsp baking soda
3/4 cup chopped walnuts

Instructions

  1. Preheat oven to 350°
  2. Grease 13x9x2-inch pan
  3. In a medium sized bowl whisk flour and baking soda together, and set aside
  4. Melt 1 cup of chocolate chips and the stick of butter together over a double boiler on low heat. Stir until silky smooth
  5. Remove from heat
  6. Stir in the 3 eggs, one at a time
  7. Stir in sugar and vanilla extract
  8. Now combine dry ingredients with wet ingredients
  9. Stir in the rest of the chocolate chips, and the nuts
  10. Spread evening onto prepared pan
  11. Bake 18-22 minutes
  12. Cool 30 minutes before cutting

Notes

Do not use high heat when melting chocolate chips and butter in the double boiler. Excessive heat will cause the chocolate to seize up, and it's difficult to get it back to liquid form. Be patient, melt it low and slow!
